'content' => '<p>The creativity was streaming — spurred in part by the offer of a gift card for the best looking bread art — during a recent private event offered by Plate Nextdoor to participants of the Wounded Warriors Project.</p>
<p>Bread art was the game, and its players: 35 devices streaming the class to their homes, some cooking along with Plate Nextdoor instructor Shazia Rizvi.</p>
<p>Participants from the Wounded Warrior Project’s alumni program, and caregivers, followed Rizvi's instruction to bake focaccia and decorate it with vegetables and herbs to create bread art.</p>
<p>The participants brought their ‘A’ game in the decoration department.</p>

<p>“We have some competitive foodies,” laughed WWP outreach specialist Gina Colon.</p>
<p>WWP members Angel and Danila Alvarez earned a $25 Amazon gift card for their creation (pictured above).</p>
<p>Wounded Warrior Project was founded in 2003 to help provide resources and support to those returning injured from combat in Iraq and Afghanistan after 9/11. It has grown nationally, and as of September 2019, there were 168,000 registered warriors, family members and caregivers.</p>
<p>Colon is an outreach specialist based in New England, but the participants of the class she helped organize drew nationwide response, with folks creating bread art from Fresno, California, to Jacksonville, North Carolina, and many places in between.</p>
<p>“I serve those who served,” she says. She has been with WWP since 2018.</p>

<p>The pandemic moved many of the alumni program’s offerings online, Colon said.</p>
<p>The virtual programs have a diverse national attendance, rather than focused on in-person events by region. As a result, Colon (and her fellow 60 WWP outreach specialists) looked for creative classes that could be offered virtually.</p>
<p>A search on Facebook led her to Plate Nextdoor, which offers cultural experiences in global cooking, baking and art.</p>
<p>Working with Plate Nextdoor CEO Supriya Shekar, Colon said WWP has offered about six private events for its participants. Events have included making naan and curry, and biscotti.</p>

<p>“It was a good fit for us because we’re national. And the set up, the instructors have it down perfect,” Colon says of working with Plate Nextdoor, which uses a two-camera set-up that shows both the instructor and their workspace.</p>
<p>Rizvi has instructed many of the private events for WWP, and participants feel like they know her, Colon says.</p>
<p>There was strong discussion for another competitive class during the bread art event, almost “The Great British Bake-Off” style, like the popular Netflix show.</p>
<p>“Partnering with Wounded Warrior Project during the pandemic to provide virtual entertainment for those who served and their caregivers has been very special for Plate Nextdoor. We are so excited to see individuals/families join in virtually with so much excitement and cook along with our diverse background instructors and learn about a new culture and food locally without having to travel far” says Shekar.</p>
<p>Colon says they have gotten “so much positive feedback from virtual events.” She said there are usually 50 to 70 alumni events a year by region.</p>

<p>The format has allowed those WWP serves to connect all over the country. They’ve also helped connect those living together.</p>
<p>The bread art private event had several couples and families participating — and Colon says that isn’t unusual.</p>
<p>“Cooking is very therapeutic,” Colon says, and a “way to connect significant others and families.”</p>
<p>The virtual events have also made more WWP events more accessible to participants who didn’t live within easy driving distance of in-person events.</p>
<p>“Virtual has opened the door,” Colon says. “People are meeting each other.”</p>
<p>The goal of the WWP’s alumni program and its events is to connect warriors and caregivers to each other. There are many other programs offered to those who served and their caregivers under the WWP umbrella, including job/career assistance, mental and physical health and wellness, independence programs and peer support.</p>

'content' => '<p>It’s cold out when Olga Kharina mulls wine and starts preparing a Russian honey cake for a virtual class in late January.</p>
<p>But the warmth is in the cooking, she says.</p>
<p>The Plate Nextdoor instructor says food tastes better when it’s made with love, which may be why in a country full of honey cakes, Olga’s sister always requests she make hers when Olga visits her in Russia.</p>
<p>“Ever notice how food tastes different based on the household? … Food is always about the energy,” she says.</p>
<p>She recently <a href="https://www.platenextdoor.com/blog-detail/sold-out-private-event-partners-plate-nextdoor-with-museum-of-russian-icons">hosted a sold-out virtual private event with the Museum of Russian Icons</a>, hosted by Plate Nextdoor. The organization offers instruction for global cooking classes and empowers women instructors to share their cultural experiences and cooking talents virtually.</p>
<p>Olga will <a href="https://www.facebook.com/events/880290359394387/">host a class geared toward kids Feb. 18-20</a> in Newton, Massachusetts. It’s meant for in-person participants and limited to 10 kids who will learn how to make dishes from a different country each day, including Italy, Japan and Mexico.</p>
<p>She holds passports for the U.S. and Russia, and hopes to get back to Russia to visit her family in March. It’s been a little over two years since she saw them, with plans last year derailed because of the pandemic.</p>
<p>Originally from Ukraine, her family moved to Russia and Olga moved to the U.S. about 12 years ago. She started cooking after the move, when she was a stay-at-home mom and wanted something for herself. Cooking and trying different recipes “made me feel something,” she says.</p>
<p>“I couldn’t get out from the house. … I had to create another world that was just mine for me to explore and learn something.”</p>
<p>Through it all, she leaned into recipes from home, like the honey cake, even though while living in Ukraine and Russia, she didn’t cook them with her mom.</p>
<p>Now her kids, ages 7 and almost 6, help in the kitchen. She says she likes to cook with them because it creates memories to cherish.</p>
<p>“They follow instructions really well,” she says.</p>
<p>Olga said she had coronavirus in the fall. It affected her taste and smell for about a month.</p>
<p>“It effected my cooking a lot,” she said. It forced her to cook differently, and occasionally her food was too salty, but her taste buds are back now.</p>

<p>Olga’s lineup for Plate Nextdoor often includes dishes from Russia, but also sushi, Mediterrean and others. She has hosted 16 private events in two years, and has been an instructor with Plate Nextdoor since March 2019, according to Plate Nextdoor CEO Supriya Shekar.</p>
<p>“I love people who like to eat,” Olga says.</p>
<p>She also enjoys traveling and taking cooking classes while abroad to bring back to teach.</p>
<p>“Coffee in Europe is amazing,” she says a little wistfully.</p>
<p>On her list for post-pandemic travel is Tulum, Mexico.</p>
<p>When Olga returned from a trip to Barcelona, she was inspired by a class she took on paella. It was one of the first classes she offered with Plate Nextdoor.</p>
<p>An introvert, Olga says it’s challenging to talk for two hours straight, particularly in a virtual class. But, she says, it’s the only way to share tips and the research and stories behind the dishes they are creating.</p>
<p>“I love the part where people can see that cooking can be fun and easy and delicious at the same time,” she says.</p>
<p>She is more comfortable now with a few more virtual classes under her belt.</p>
<p>“At first it’s something that I love to eat,” she says of the classes she offers. “I know that when I have a class, I will teach the techniques, but also talk about how much I love the dish.”</p>
<p>Some go-to shows and books on cooking for Olga include "Chef’s Table" and "Restaurant on Edge," both on Netflix, and the book “Science of Good Cooking.”</p>

'content' => '<p>Two Boston-area luxury apartment buildings are taking advantage of the love in the air to bring their residences together virtually for a private event hosted by Plate Nextdoor.</p>
<p>Plate Nextdoor provides virtual instruction in global cooking and baking, making it easier than ever to explore different cuisines and cultures without having to leave home.</p>
<p>Yolimar Franceschi, a resident services manager at The Kensington in Seaport, said they have added about 50 residents in the past two months to their community.</p>
<p>In an effort to build engagement, which has been challenging during the pandemic, the manager is using a private event with Plate Nextdoor on Feb. 11 for a course in Venezuelan arepas.</p>
<p>The event is open to 30 residents. The Kensington has 381 units and more than 400 residents.</p>

<p>Participants will join from their apartments, following virtual instruction by Elena Irene Zdanis, who specializes in Venezuelan cooking.</p>
<p>A community is based and built on reputation, Yolimar said, and having events to grow engagement are important to the experience for residents of The Kensington.</p>
<p>“We try to create community as opposed to just apartment living,” Yolimar said.</p>
<p>The residents of VIA Seaport Residences also will be participating in a private event for Valentine’s Day, making macarons.</p>

'content' => '<p>The best way to warm up on a cold day is with a hot drink.</p>
<p>That was some of the advice Plate Nextdoor instructor Olga Kharina provided virtually to about 15 participants in a private event hosted by the <a href="https://www.museumofrussianicons.org/">Museum of Russian Icons</a> on Jan. 23.</p>
<p>Olga led the group through making mulled wine on the stove as they baked Russian honey cake. Instruction sheets were provided before the class so participants could buy the ingredients and cook along.</p>
<p>“I was looking for a way to spend a cold Saturday,” said museum educator Amy Consalvi.</p>
<p>She found <a href="http://www.platenextdoor.com">Plate Nextdoor </a>and connected with CEO Supriya Shekar about collaborating on a private event.</p>
<p>Plate Nextdoor offers instruction for global cooking classes and empowers women instructors to share their cultural experiences and cooking talents virtually. The private event experience can be used as a team-building activity, or as a special treat to share with members of your organization.</p>
<p>The event was open to museum members (for a discount) and non-members.</p>
<p>Amy said Olga’s instruction was well received. The class was recorded for the museum to share with participants who held off on the virtual instruction, or if they wanted to make the honey cake again.</p>
<p>“Partnering our instructors with organizations brings an authentic and educational cultural experience to members while providing a fun and interactive socialization opportunity as well,” said Plate Nextdoor marketing director Courtney Kershaw. “Instructors get to share their culture while bringing people together and building connections to enhance the organization’s own culture.”</p>
<p>Olga mostly focuses on Russian cuisine. She was born in Ukraine and her family, which moved back to Russia, is mostly based in Russia.</p>
<p>When she visits, her sister insists Olga make her honey cake — even though the sweet is readily available throughout the country.</p>
<p>The honey cake is the “king of cake” in Russia, and one of the best representations of Russian cuisine, Olga shared. The “king of cake” actually gained popularity, Olga said, when it was prepared by a chef in the tsar’s palace for the queen in the 18th century. She didn’t care for the taste of honey, but raved about the cake and the chef was given an award.</p>
<p>The mulled wine recipe Olga shared used a bottle of inexpensive red wine, triple sec (though you can sub in other alcohol such as brandy or cognac), sugar, orange juice, cinnamon sticks and was garnished with a fresh lemon slice.</p>
<p><em><strong>“Warm wine opens all the flavors,” Olga said.</strong></em></p>
<p>It also helps improve the taste of an inexpensive wine.</p>

<p>As she frosted the many layers of cake, Olga said it’s best if it rests overnight in the refrigerator to really let the flavors absorb and the cake layers soften.</p>
<p>Olga ate the cake growing up, but never baked it with her mom. She learned the recipe after moving the United States, more than a decade ago.</p>
<p>“I explored the recipe on my own,” she said.</p>
<p>It’s the soft dough, she said, that makes the process a pleasant, nurturing experience.</p>
<p>“It makes me happy,” Olga said.</p>
<p>“Be happy when you bake,” she said. “You can taste that energy in your cake.</p>
<p>“This cake is a hassle, but it’s worth it.”</p>
<p>The class was littered with kitchen hacks and tips, with Olga engaging with participants throughout the two-hour event.</p>
<p>One universal helpful tip was putting a thermometer in your oven while it preheats so you can check whether it runs hotter or colder than what it is set at.</p>
<p>Another useful tip was how useful a simple pastry cutter can be, slicing through anything from pastry and biscuit doughs to sushi.</p>

'content' => '<p>When Supriya Shekar founded Plate Nextdoor about three years ago, the purpose was to create a platform for home cooks to socialize, exchange cultures and learn new cuisines.</p>
<p>“When a country has a racially and ethnically diverse population,” she says, “it becomes more important for people to understand each other's set of views to live and work in harmony.”</p>
<p>Plate Nextdoor offers opportunities to build communities and educate people on cultural diversity with virtual classes in food, art, music and more taught by a diverse and talented group of instructors.</p>
<p>The start-up, based in Boston, initially hosted in-home cooking classes and in-person events at luxury apartment communities. Now, more of the instruction is going online — and not just because of Covid-19.</p>
<p>The organization aims to grow its reach nationally, and eventually globally, bringing people all around the world together to experience unfamiliar cultures. With travel stunted because of coronavirus, but a cultural climate screaming for understanding, Plate Nextdoor’s work underscores the importance of education. The platform offers about 10 to 15 classes each month.</p>
<p>The class offerings also can be scheduled as private events to give workplaces the chance to host cultural exchanges in a fun atmosphere for their employees. The events — which can be virtual — will help build cultural awareness, understanding and introduce skills and techniques in the kitchen for everyone.</p>

<p>“Culture represents not only ties, identity and tradition, but also creativity and innovation,” Shekar says. “That is why it is important that as many people as possible should have access to culture as creators or consumers.</p>
<p>“This involves all cultural expressions, not only traditional race and ethnicity forms but also modern forms such as pop music, art and design, beliefs, and lifestyle, for a progessive world.”</p>
<p>Instructors are recruited by a team of coaches who seek out chefs, musicians, storytellers and artisans with specific skills and a knack for sharing them.</p>
<p><img alt="" src="https://drive.google.com/drive/folders/1077Da9u6bE4A4HRo_O5NxYVzyJd9vCxU" />Shazia Rizvi has been an instructor with Plate Nextdoor since its launch. Her expertise is in baking and desserts — her macaron class is one of the most popular offerings for the platform — she also teaches classes on empanadas and sushi rolling.</p>
<p>Making the switch from in-person to virtual teaching has been an adjustment, she says, but one the former teacher welcomes.</p>
<p>“I had to change my teaching methods, slow down a little,” Rizvi says. “I had to design classes to make them easier to follow.”</p>
<p>That meant simplifying or cutting down on the number of steps. But with more people getting used to video calls, it’s become easier.</p>
<p>In a class on Indian stuffed bread making from instructor Avantika Nautiyal, there were about five participants working on the recipe with her, virtually.</p>
<p>Nautiyal had a two-camera setup, so she could make eye contact with the students, but also have her workstation visible. The camaraderie and concentration was evident.</p>
<p>“We’re more connected than we would be otherwise,” Nautiyal told her participants while showing them how to knead the bread with just the right amount of water. Each held theirs up to the screen for confirmation.</p>
<p>The class offered storytelling about the significance of the dish in India, and the health merits of the ingredients being used.</p>
<p>Nautiyal says there is “no such thing as exotic food — most are home dishes from cultures we come from. … We must remember these recipes have been around longer than modern life. … without modern tools or techniques.”</p>
<p>There is no reason to be intimidated, she says. “Never walk into a class thinking (you can’t). … Each class is a glimpse into another culture, and at the end of the day, we’re all humans.”</p>
<p>Plate Nextdoor continues to expand its types of class offerings as it adds to its diverse lineup of instructors and their specialties. Courses have a cost and the ingredients list is posted ahead of time so participants can follow along.</p>
<p>“We want to create a platform not only to learn the traditions and cultures from the past but also to pave the way to the new ones,” Shekar says.</p>

<p>Instructors for Plate Nextdoor are offering courses through the season. Be it bringing new twists to traditional holiday side dishes or how-to roll sushi, there’s a sampling of culinary creations from which to choose.</p>
<p>Here are tips and tricks for bringing the holidays to your family, wherever they may be.</p>
<p>Plate Nextdoor instructor Olga Kharina says simplifying your menu will help you to adjust portion sizes depending on how large or small your holiday event is. She suggests to not get overwhelmed by lengthy ingredient lists.</p>

<p>For a class she taught on side dishes, she says she chose selections with a few fresh ingredients that can be enhanced by spices and herbs already in your pantry. The recipes also can be scaled to accommodate your event size.</p>
<p>Tomato bruschetta with burrata, a kale salad with cranberries, and crispy smashed potatoes were some of Kharina’s suggestions. She said the recipes were well received by participants in a Plate Nextdoor event (taught last holiday season in person).</p>
<p>“I identify the few important ingredients … and see what I can substitute or take out. I try to understand what the base for the recipe is and give people options,” she says. </p>
<p>Her recipes usually focus on three to four main ingredients and usually only take 15 to 20 minutes to prepare.</p>
<p>Plate Nextdoor instructor Avantika Nautiyal says all of her recipes for her classes are based on four servings, which makes it easy to scale up or down depending on your crowd size. </p>
<p>“After following multiple recipes and no one writes consistently (for instance, serving sizes are all over the place) … it bothered me so much, … whatever recipes I present, everything is four servings,” Nautiyal says, “and they are scalable.”</p>
<p>Shazia Rizvi, an instructor with Plate Nextdoor since its launch, suggests families and friends try baking together virtually. Or creating a sweet treat to package and share.</p>
<p>“You could choose a variety of cookies to bake together,” Rizvi suggests. Other, more savory, suggestions include naan, spring rolls and empanadas. Kharina also suggests Russian dumplings called Pelmeni or, if you're looking to share a cocktail (virtual or otherwise), mulled wine.</p>
<p>“Those are a pretty good group activity,” Rizvi says. “It’s easy and more interactive.”</p>
<p>For best results if cooking together virtually, Rizvi suggests selecting a leader to help guide the process and prevent unmuted chaos. Plate Nextdoor offers private events with its team of skilled instructors to help lead a group activity.</p>
<p>“Have all your ingredients prepped,” Rizvi says, so everyone on the call is ready to go.</p>
<p>Another homemade gift idea is sending prepackaged DIY cookies, cupcake or cake kits, such as the ones Rizvi sells, to friends and family. </p>
<p>Or decorate them yourself and individually package them to send or deliver as gifts.</p>
<p>Kharina suggests making batches of blueberry muffins or cranberry biscotti to share. Or, pre-measure and package the ingredients to give as gifts.</p>

But, according to the CDC, social distancing can make people feel isolated and lonely, which can increase stress and anxiety. It can be an incredibly lonely time for many people, especially those who live in high-rise urban buildings.</p>
<p>There are about 500 apartment communities such as this in the Boston area.</p>
<p>Now with Phase 3 opening in Massachusetts, Plate Nextdoor has come up with a hybrid model for private events in food, art and music by local instructors for apartment communities.</p>
<p>The hybrid model, in which the instructor is virtual and projected on a screen, gives a little bit of freedom for residents to meet people in their community, with gatherings of 15 to 20 now allowed in lobby or lounge areas, with proper safety guidelines followed.</p>
<p>The next such class is Oct. 1 at Echelon Seaport, the newest luxury apartments in the most happening Seaport District in Boston. Residents of Echelon will gather in the lobby to learn to make beautiful fall wreaths using silk flowers and greens for their new homes with Plate Nextdoor’s virtual instructor.</p>
<p>In the Boston area, Plate Nextdoor delivers all materials or ingredients needed for each of these events to the management directly from Amazon, a supermarket or local farms to prevent spread of contamination. <p>I attended a Korean cooking showcase at Seunghee Chai and my experience is beyond words. </p>
<p>Home chef Seunghee Chai flew in from South Korea less than a year ago to accompany her husband who landed a project here in Boston. She is a mom and a passionate homemaker who enjoys cooking traditonal Korean food from her home town.</p>
<p>I was fortunate enough to get invited to learn one of their highly desirable dish, which is generally made during holidays, called "Japchae." She says this colorful dish is a eye-catcher on any holiday table. She is also showing us a side dish of Korean Lettuce Salad.</p>
<p>Plate Nextdoor is just not about cooking but all about experience. We get to experience what goes on behind the making of these amazing cuisines from around the world. The exchange of recipe, ingredients, techniques, tools and, most important, taking home some new cool facts/history about a country that you may wish to go in future.</p>
<p>As soon as I entered Seunghee's sweet home, my jaw dropped with her amazing collection of Korean books for her kids that she shipped along with her from Korea, so that her kids are up to date with their Korean education. Its amazing how much dedication they show with education and learning. Below is a picture of her amazing kids book collection:</p>

<p>As soon as I entered her kitchen, I noticed a big clay pot that was also shipped from Korea to store rice. She mixes two different kinds of rice and also grains in it. The clay pot prevents invading of bugs into the rice. </p>

<p>She had her ingredients and vegetables all ready for Japchae and even a translator for me, just in case I don't follow her. She can understand English, but is a little shy in speaking.</p>
<p>She is showing a vegetarian version of the recipe, but you can always replace beef/chicken or pork instead of mushrooms to this recipe.</p>
<p>We were done cooking in 45 minutes, and I must say it tasted delicious! The cooked sweet potato glass noddles were hand mixed delicately with marinated and individually sauted vegetables to keep the texture crispy as the cooking temperatures for these vegetables vary.</p>
<p>At the end, she seasoned the mix with sesame oil and sesame seeds and it was all ready to serve.</p>
<p>My favorite was the Korean lettuce salad, easy to make. Korean dressing had grated garlic and green onions in soy and fish (optional) sauce and spicy red chilly flakes powder. You can serve this with your grill food or rice, I will be making this a lot this summer!</p>
<p>Below are some pictures of the cooking experience and cultural enlightening I had in her home. We socialized over food along with another person from the community, her name is Mariko, moved in recently from Tokyo, Japan. Hope to peek in her kitchen some day to learn miso soup or sushi rolls. The best part of this meeting was, though each of us spoke different languages, we somehow understood each other without explaining too much and that was the magic of food, you communicate through your five senses, and I enjoyed every bit of this experience. Seunghee Chai will be showcasing "Japchae" and "Korean Lettuce Salad" on 15th July, 2017 at 11am in Allandale Farm in Chestnut hill MA, come experience Korean Kitchen in the outdoor settings this Summer.</p>
